3 Ingredient Chocolate Pudding healthy

This pudding is almost too delicious to be healthy. But in fact the basic ingredients are really just banana, silk tofu and cocoa powder. So it is sugar free, vegan, healthy and incredibly delicious! You can eat it for breakfast, as a dessert or as a snack in between, whatever you feel like. Because of the tofu, the pudding is also high in protein and therefore fills you up well.

You don't know Silken Tofu? Its consistency is a bit like curd cheese and you can usually find it in every asian market around the corner or in an organic supermarket. Believe me, I don't come from a huge city where there is an endless variety of products, but Silken Tofu can even be found here. So that's saying something.

I used lightly deoiled cocoa powder. It makes the pudding taste not so bitter, but sweeter. Strongly deoiled cocoa powder is just as well possible, but you might want to sweeten it with maple syrup or something similar if the pudding is not sweet enough for you.

I prefer to add berries as topping, an Omega 3 source (here hemp seeds) and something for the crunch (cocoa nibs and soy crispies). This is the perfect combination for me. But there are no limits and you can use whatever you like.

Ingredients for 1 portion
Basis:
  • 1 frozen, large banana (here: 160g)
  • 150g silken tofu¹
  • 10g cocoa powder²
Toppings optional:
  • 10g hemp seeds
  • 5g soy crispies cocoa
  • 5g cocoa nibs
  • 1/2 banana
  • 50g mixed frozen berry
Preparation
  1. briefly thaw the frozen banana and then mix to a smooth mixture
  2. add silk tofu and cocoa powder and mix again
  3. decorate with toppings
Remarks
¹ You can get silken tofu at the asian market or organic market.
² I recommend weakly deoiled cocoa powder, the pudding will be less tart. With strongly deoiled cocoa powder you might need a little more sweetness.
