It is time again! The apple season has started. And how do you ring in the right way? Correct! With a delicious vegan apple crumble cake with vanilla sauce. And as you surely know, I try to keep the recipes on my blog as healthy as possible. That means I mainly use wholemeal flour and no white sugar. Therefore this cake is not low in calories, but still not too much of a sin!
It is really sooo delicious, provides a wonderful smell in the kitchen and tastes great even for non-vegans. In combination with the vanilla sauce you have the perfect dessert. The vegan vanilla sauce is optional in this recipe. If you prefer to serve your cake without sauce or with vanilla ice cream, this is also a good idea. It will always taste good!
The instructions look very comprehensive, but the cake is easier than expected - don't worry. If you want to prepare a gluten-free version, you can also exchange the flour for the one of your choice. However, you may need to adjust the amount of water in the dough.
In order to use a little less butter, I added ground almonds to the dough. Since they have a very high fat content, the vegan butter content in the short pastry can be reduced and the dough still meets the requirements. Instead of real eggs we use flax seed eggs in this recipe. You can make them from either ground or ground flaxseed. However, so that they don't stand out too much in the dough, I prefer the ground flax seed variety. I have also used coconut blossom sugar in this recipe. This has a slight caramel taste and is healthier than refined white sugar, as its low glycemic index causes the blood sugar level to rise more slowly. However, if you prefer to use white sugar, you can of course do so too!
