Bean Balls/vegan Meatballs

You can't have vegan meatballs? Yes, we can! Easy peasy lemon squeezy. All you need is a can of beans, some mushrooms and some oats. Not only does that make the meatballs very filling, but also very healthy.

By the way, this dish is also very suitable for children, as we have noodles with tomato sauce. The absolute classic. In addition there are only a few pimped out protein balls, if you like.

It actually takes some time to form the balls and it is also a bit muddy, but it is worth the effort. I first tried one variation in the pan, but then I quickly noticed that the balls deformed too much. So I chose the fat-free variant and prepared the balls in the oven after all. It also worked wonderfully!

Funfact: You can also use this recipe for vegan burger patties. All you have to do is shape the balls flat. However, I would fry the patties in a pan with a little oil and a closed lid so that they get well done.

Vegan Meatballs don't work? Oh, yes, they can. They are even super healthy, rich and ideal for children who love noodles with tomato sauce anyway. The forming of the balls is a bit muddy, but it's all worth it!

Duration 20 + 25 minutes
Ingredients for 4 portions
For the balls:
  • 1 tin of beans, drained weight approx. 255g (here: kidney beans)¹
  • 150g mushrooms
  • 1 onion
  • 2 cloves of garlic
  • 15g crushed linseed
  • 100g oatmeal
  • 30g sunflower seeds
  • 30g tomato paste
  • 1 teaspoon of salt
  • 1 teaspoon paprika powder
  • pepper, nutmeg, dried oregano
  • 1 teaspoon of parsley fresh or frozen
For the sauce:
  • 400g strained tomatoes
  • 1 teaspoon of dried oregano
  • 1 teaspoon of parsley fresh or frozen
  • salt, pepper, paprika sweet
Other ingredients:
  • approx. 300g noodles (here: soybean noodles)
Preparation
  1. cook the pasta according to the instructions on the package
  2. preheat oven to 180°C circulating air
  3. slightly grease the baking dish
  4. wash the beans well and drain
  5. put all the ingredients into a blender and mix carefully, one by one, so that the mixture is almost smooth but not too fine
  6. form balls from the mixture (approx. 2 tablespoons of mixture per ball) and place them in the oven dish
  7. bake in the oven on the middle shelf for 15 minutes
  8. meanwhile, prepare the tomato sauce by mixing all the ingredients of the sauce
  9. after the balls have been in the oven for 15 minutes, take them out, add tomato sauce and bake for another 10 minutes
  10. serve with pasta as desired

¹ You have free choice here, any kind of beans are possible. Even black beans, white beans...
