I love the smell of freshly baked muffins in the kitchen! Do you guys feel the same way? Then let me show you how you can bring the wonderful smell of these vegan blueberry muffins into your kitchen in no time at all.
You don't need many ingredients, just a little bit of time and you can start. These blueberry muffins are not only absolutely delicious, but quickly made, without white sugar and perfect for summertime (or any other season, they are simply a classic). Moreover, this is a universal recipe. Of course you can also use other berries like raspberries or a mixture of different berries or fruits. But I prefer to use frozen blueberries because I think they taste more intense. Besides, I usually keep them in the freezer and most of the time they are even healthier and more nutritious than fresh berries, because they are shock-frozen quickly after harvesting and don't need to be sprayed with so many chemicals to prepare them for the long journey. If you like, you can also make a cake from this recipe, but then you may need to adjust the quantity and baking time.
You want to know something else? You don't need to have a guilty conscience after these muffins, because they are also healthy and gluten-free when needed. I'm sorry, what? No kidding, ha, ha. I don't want to blow your minds with all this wonderful news. You need 250 grams of flour for 10 muffins. You can use white flour, or you can use muffins a little more nourishing, like me. For this I used a mixture of 150g whole wheat flour and 100g oat flour. For this I simply ground 100g oat flakes in a food processor to flour. You can make the muffins gluten-free by using 250g gluten-free oatmeal.
For the muffin cups I used these cute silicone cups* and a 6 muffin tray, similar to this one: Muffin pan for cupcakes*. I always try to save some garbage, so I do not use paper cups. The muffins can also be removed from the silicon cups without greasing them and you can even make pretty heart-shaped or flowery muffins. Depending on which shape you like best.
After you have mixed all the ingredients, put them in the oven for about 25 minutes and they are ready. Warm they taste sooo good too!
