gluten-free Chocolate Pancakes (vegan)

A late night's sleep, a relaxed (Sunday) morning and an extensive breakfast with a portion of gluten-free chocolate pancakes. Well, how perfect does that sound for you? On a scale from 1 to perfect, it's absolutely awesome for me.

I've wanted to try gluten-free pancakes for a long time and here they are. Very tasty, quickly made and actually very healthy! I used buckwheat flour here. You can buy it ready ground or you can grind it all by yourself in a powerful food processor or mixer (mine has 700W) at the highest level. Both work well for me. Instead of buckwheat flour you can also use normal (wholemeal) flour. That is up to you. But you have to check if you use a little less plant drink and then pour some more.

For pancakes I always need a delicious topping. For my fluffy Vanilla Pancakes, for example, it was vanilla yoghurt with strawberries. Here I chose boiled berries, which I then pureed. Also very tasty!

Breakfast & Smoothies

These pancakes are not only quite healthy, but also super delicious, perfectly chocolaty and ensure a successful start to the day, I promise!

Duration 10 + 10 minutes
Ingredients for 10 medium sized pancakes
Moist ingredients:
  • 2 bananas (here: 200g)
  • 250g plant drink (here: almond drink)
  • 1 teaspoon of apple vinegar
  • 30g agave syrup (optional)¹
Dry ingredients:
  • 160g buckwheat flour²
  • 40g cocoa powder
  • 2 teaspoons baking powder
  • 1 pinch of salt
  • 2 teaspoons cornstarch
Toppings (optional):
  • 150g frozen mixed berries
  • handful of fresh berries
Preparation
  1. mix dry ingredients in a bowl
  2. put wet ingredients in a blender and mix until smooth
  3. add dry ingredients to the wet ingredients and mix at low speed until a smooth mixture is obtained
  4. Heat some oil (e.g. coconut oil) in a coated pan and gradually fry the pancakes with 2 tbsp. of dough each³
  5. optional: heat and puree berry mix in a pot, then pour fresh berries over the finished pancakes and serve
Remarks
¹ Depending on how sweet your bananas are, you may need some sweetener to give in. So you should try the dough. ² You can also grind dry buckwheat into flour yourselves.
³ If you have a pan with a lid, you are welcome to use the lid. This is the best way for me to fry the pancake, because the pancake can stick from above, i.e. on a low level the pancake will not burn you from below and from above it will also go through.
