Lentil and Carrot Curry

All curry lovers hands up! I have my favorite curry recipe for you right now. It is cooked really fast and the result blows my mind every time. I think I'm just really into carrots these days. And red lentils are also my favourite as they are cooked very quickly and have a soft consistency.

Duration 30 minutes
Ingredients for 3 portions
  • 240g red lentils
  • 500g carrots
  • 1 onion
  • 600ml vegetable broth
  • 1 tablespoon of olive oil
  • 1 tablespoon curry
  • salt, pepper
Preparation
  1. either chop onions and carrots by hand or chop them in a blender
  2. heat olive oil in a deep pot and sauté onions
  3. add the carrots and fry until transparent
  4. deglaze with red lentils, curry powder and vegetable stock
  5. add salt and pepper, cover the pot and cook for 5 minutes on high heat, then reduce heat and simmer for another 10 minutes, stirring occasionally
  6. puree at the end according to taste
