vegan Mango Chia Pudding

Do you need some variation in your daily breakfast? Then check out this vegan and sugar-free recipe. Chia pudding is nothing new in itself, but have you ever tried it with mango puree? Absolutely delicious, I assure you!

And the recipe is very simple: mix soy yoghurt with oat milk and chia seeds, let it steep, add/mash the fruit, top it off as desired, done. That's it! Ready is a very refreshing breakfast that you can enjoy in spring or summer (or any other season).

Chia seeds are very similar to flax seeds. They can be used very well as a binding material, for example as an egg substitute, because they swell incredibly well in liquid and bind it. Therefore, in combination with yoghurt and liquid, chia seeds also get a pudding-like consistency. Furthermore, they make you full for a long time and are rich in protein.

Chia pudding with mango puree, blueberries and a slight touch of coconut is for me the absolutely perfect combination. I love this breakfast! It is so versatile, you can use any fruit puree you can think of and it is great for Meal Prep. Because of the chia seeds it is rich in Omega 3, protein and even sugar free.

Duration 30 + 10 minutes
Ingredients for 1 Portiop
Base:
  • 70g frozen blueberries
  • 200g soy yoghurt natural or vegan coconut yoghurt
  • 100g oat drink
  • 20g chia seeds
  • 200g mango¹
Toppings optional:
  • 10g coconut flakes
  • 10g goji berries
  • cereal
Preparation
  1. mix yoghurt, chia seeds and oat drink and let it swell covered in the fridge for at least 30 minutes
  2. puree mango, add
  3. add blueberries
  4. and decorate with toppings of your choice
Remarks
¹ You can use frozen, thawed or fresh mango. Depending on how you like it. For me frozen mango is a bit too cold in the morning, so I like to defrost it or use fresh mango.
