Pumpkin Spice Rice Pudding

How long have I waited for one of my favorite seasons, autumn! Finally so much good fruit and vegetables are in season again. Wonderful. That's why I really wanted to create a Pumpkin Spice Rice Pudding. Super easy and just incredibly delicious. I could not stop eating. Actually I wanted to make 2 portions out of it, but spontaneously it turned out to be a big one.

This vegan rice pudding not only tastes incredibly good, but also hides 1 portion of vegetables. Pumpkin puree is mixed in, which gives it a slightly sweet note. Together with the Pumpkin Spice from Reishunger this rice pudding has the perfect autumnal kick.

I bought the spice* and the pudding rice* from one of my favorite stores when it comes to rice. Now it sounds strange that you can buy spices at Reishunger, but I am really glad that they offer it there. I don't use it for nothing in all kinds of dishes that have to do with pumpkin or autumn. Since oat milk has a slightly sweet note anyway, it is ideal for preparation. Alternatively, you could also use rice, soy or pea milk, these are at least as well suited. Instead of agave syrup you can also try other liquid sweeteners, if necessary you should adjust the amount. Depending on how sweet you like your food.

Meanwhile I wonder why I used to eat rice pudding with cow's milk. Plant milk is at least as good as cow's milk. I can really only recommend it to you! Rice pudding can be eaten cold or warm for breakfast, as a main dish, dessert or snack. Whatever you feel like. Or just for all occasions together and have a whole day of rice pudding, haha.

Finally autumn is back! Here I have the perfect combination for you. Pumpkin, berries and chocolate fit together incredibly well. And since we still need one main ingredient, we have rice pudding, haha. Enjoy this explosion of taste.

Duration 50 minutes
Ingredients for 2 medium portions or 1 big portion
Base:
Toppings optional:
  • 80g (frozen) raspberries
  • 60g (frozen) blackberries
  • 20g vegan dark chocolate
  • cocoa nibs
  • some Pumpkin-Spice*
Preparation
  1. wash pudding rice well
  2. put oat drink, agave syrup, pumpkin spice, salt and rice pudding in a pot and stir well
  3. boil at low heat for 10-15 minutes and stir again and again so that nothing burns
  4. add pumpkin puree
  5. cook for another 10 minutes, always stirring
  6. remove from the hot stove and let it swell for another 15 minutes if necessary, until the rice pudding is as soft as you like it
  7. decorate with toppings & bon appétit!
Remarks
¹ If you like it a little sweeter, you should use a little more agave syrup.
