Mediterranean Couscous Salad

This Mediterranean couscous salad was originally my favorite couscous salad before I became vegan. Back then I made it with feta, today I have replaced the feta with smoked tofu and it tastes even better in vegan form!

It is really simply made and you do not need many ingredients. It also tastes great in a small barbecue situation with a few friends or family on a warm summer evening. What I also love about couscous is that it's so versatile. You can eat it wonderfully sweet, or as in this case, savoury, and it always tastes good. And it is so easy to prepare because you just pour hot water over it and it swells all by itself without you having to cook it. Super easy, super tasty.

For example, if you are not a big fan of onions anyway, this salad is a great choice. The arugula provides a pleasant spice and sharpness, thus the salad does not need any onions at all. Tofu ensures is a good protein source in this salad and the arugula provides us with folic acid, vitamin C, beta-carotene, etc. A really healthy bomb, so to speak!

This mediterranean couscous salad is perfect for a delicious barbecue or a quick lunch on the road. It is quickly made, full of healthy ingredients, makes you feel repleted and tastes delicious!

Duration 20 minutes
Ingredients for 4 portions
  • 1 cup of couscous (here: 150g)
  • 2 cups of water (here: 480ml)
  • 150g rocket
  • 3 tablespoons of tomato paste
  • 200g smoked tofu¹
  • 2 peppers
  • 200g cherry tomatoes
  • juice of half a lemon
  • 2 tablespoons of olive oil
  • Salt, pepper, paprika noble sweet
Preparation
  1. wash the couscous, soak in hot water in a ratio of 1:2, add a little salt and tomato paste, swell and cool
  2. wash and cut the rocket, peppers and tomatoes
  3. cut smoked tofu into cubes
  4. add olive oil, lemon juice, pepper and paprika to the couscous and mix
  5. add remaining ingredients and mix together
Remarks
¹ Alternatively, you could take a pack of vegan feta cheese. This makes the salad taste very tasty!
