Quinoa Fruit Salad (vegan)

Do you feel like a change from a classic fruit salad? Then you should treat yourself to this one! I guarantee you, this vegan quinoa fruit salad is not only a vitamin bomb, but also incredibly delicious and is due to the quinoa high in protein as well.

Quinoa has several advantages. It is rich in protein and therefore satiating, also gluten-free, rich in nutrients and versatile. Just like in this sweet salad. So you can use quinoa for a perfect summer version. Perfect for a picnic in the park, a snack in the outdoor pool or wherever you want to enjoy this delicious salad.

A little mint and a dressing of strawberries, lemon and soy yoghurt make this salad a real treat. Which is another advantage: You can use just about any fruit you have at home. No matter if fresh or frozen and whichever combination you prefer. As long as you use your favourite fruit, this quinoa fruit salad can only be good. I'll give you the information in the recipe below as to which fruit I used, but you really don't have to stick to that. A small tip by the way: If you add some oil to the dressing (e.g. linseed oil, which is rich in Omega3), then you can absorb the vitamins better.

Do you like fruit salad as much as I do? Then I have the perfect variation for you! A mixture of quinoa, your favourite fruit and a delicious strawberry-lemon dressing. What are you waiting for? Go ahead. You have to try it, it's so good. :)

Duration 25 minutes
Ingredients for 4 portions
  • 85g dry quinoa
  • 2 apricots
  • 2 plums
  • 1 apple
  • 1 pear
  • 1 (gold) kiwi
  • 1 banana
  • 1 mango
  • ½ Pomegranate
  • 130g strawberries
  • 1 stem of mint
  • 150g unsweetened soy yoghurt
  • 20g agave syrup
  • juice of one lemon
  • 150g strawberries
Fruit Salad:
  1. wash the quinoa and cook it according to the instructions on the packet (I did NOT add salt to the cooking water), drain and let it cool
  2. wash the fruit, peel if necessary and cut into small pieces
  3. put everything in a bowl
  4. tear off mint leaves and add to the bowl, then mix altogether
  1. squeeze lemon
  2. put soy yoghurt, lemon juice, agave syrup and strawberries in a mixer
  3. pour over the salad in portions
¹ These ingredients are totally variable. I have only written down here which fruit I have used. You are welcome to simply use your favourite fruit!
